Super Kitchen Chili Recipe

Feeds a large crowd, tasty and packed full of protein and fiber.
2 pounds ground beef
(omit for the vegetarian version and add 2# vegetables)
2 cups chopped onion
1 cup chopped bell pepper
4 tablespoons chili powder
2 cloves minced garlic
2 cans (28 ounce)diced tomatoes
2 cups soaked kidney or pinto beans
(soak overnight in warm water)
A pinch of salt and pepper
1 In a large sauté pan. Sauté the beef ( if using),onion and bell pepper and extra
vegetables (if using). Sauté until browned. Drain excess fat
2 Add chili powder, garlic, soaked beans, tomatoes and salt and pepper. Bring
to a boil and reduce heat to low. Cover and simmer for one and a half to two
hours. Stirring occasionally. Until beans are tender
Can garnish with cilantro, cheese, sour cream or hot pepper
Serves 10.
